ABOUT THE LIVING LIFE IN COSTA RICA BLOG

I (Vicki Skinner - aka "THE Sarong Goddess") created this blog in 2007 to share DETAILED Finds•Lists•Info•Events•Experiences to help bring more EASE to people living in, visiting or thinking of moving to Costa Rica since DETAILS are NOT easy to find!
I’m NOT an expert (an "expert" 2 ME knows 101%-NOT me). I believe in sharin info•helping where I can! And with over 2,200 entries, so some things might be out of date, so if you find old info PLEASE help each other by getting the updated info & sharing it with me to revise. At least you have some basic info to get you started.
VOLUNTEER TO HELP:
Better yet - do you have extra time on your hands & looking for a volunteer project? Since this blog is a labor of love & RARELY does anyone share a donation (even though MANY have said how much it's helped them), I could REALLY use help updating info. Spanish speakers ESPECIALLY welcome since my VicLish can be somewhat limited at times!!

DONATE:
Has my blog helped in any way? Helped find something•brought more EASE? More exposure or business?
I welcome you to show YOUR appreciation for my efforts!
ANY size DONATION is APPRECIATED!

MANGOES - It's Mango Season in Costa Rica - What do you do with ALL of those DELISH fruits??!!!?!?!?!?

It's Mango Season somewhere in Costa Rica and man can they proliferate!!!  So what all can you make with them??

If you have Mango Trees and don't know what to do with them, PLEASE, SERIOUSLY considering finding a charity to donate them to - ESPECIALLY one dealing with children, a seniors home, families, women!!!

When my house used to be a Donation Drop-Off Point, I'd take the sweat pant type outfits and BIG BAGS of mangoes over to the Immigration Jail.

Now what was MY FAV thing to do with them??  Make my MEGA EASY
The Sarong Goddess' (that's ME) Linguasmo•TongueGasmic
MANGO CREAM CHEESE PIE!!
It's a "Vicki-ized" recipe along the lines of what Robin's Pie's - formerly in Escazu, Costa Rica used to make!!!

It doesn't really have a "recipe" for - I just create it based on what I'm hungry for, have the $$ for or have available. Just TRUST it WILL be DELISH!!!!

Put COCONUT OIL (or another NON-olive oil oil) in a pie dish (or whatever you desire to put it in) so the crust won't stick to the dish)

Take a package of COOKIES (SIZE - however many YOU desire depending on how thick YOU'D like it.

FLAVOR COOKIES - I like to use Coconut, Butter Cookies or Graham Crackers).
CRUSH them up (in a blender or a ziplock bag and use something like a rolling pin or hammer or a book).

Add a stick of BUTTER and melt it down OR about 1/2 that in melted COCONUT OIL and mix them together (sometimes I add COCONUT FLAKES to the crust!!) and form it to the dish.

SOMETIMES I bake the crust (350º-F/176.7°C - for about 10-20 minutes [depends on how baked YOU want it to be) and sometimes I don't!

In a separate bowl fold in together some CREAM CHEESE (I like the soften cream cheese which I leave out to soften a bit more. The size depends on how THICK a filling YOU desire).

Fold in some HONEY (how sweet do YOU desire it to be??). SOMETIMES I add an EGG to help thicken it and if I do I bake it for about 20 minutes (I think [I don't usually pay attention]). Add on top of the Crust.

In a BOWL - Cut up a BUNCH (as MANY•thick as YOU desire) of OVERLY RIPE MANGOES (the kind that most people would throw out as they're nasty looking and have LOTS of black spots??!!! To ME, THAT's the phase I LOVE to eat them in as to ME - they have an almost candy cane sort of taste!)

Then MUSH them up with your hands (I'm a VERY tactile child and LOVE playing with it - making it squirt out between my fingers - Oh and don't forget to eat off the mango around the giant seed). Then I just glump it onto the crust/mix and put it in the fridge till I can't wait any longer and VUALA!!!!

I've had people that didn't like mangoes LOVE LOVE LOVE this LINGUASMO•TongueGasmic concoction!!

Did you make it? Let me know how it worked for you!!!
